Vegetarian Grilled Pita Pizzas

Versatile grilled pita pizzas can be made using a variety of fresh ingredients. Use the ingredients suggested below or, swap in your favorite hummus flavor and diced vegetables. Grilled pita pizzas are a quick and easy option for healthy appetizers or a light and satisfying meal.

Ingredients
  

  • 4 flatbread pitas recommend whole wheat
  • olive oil
  • ¾ cup hummus
  • ½ cup diced bell pepper try a mix of colors
  • ½ cup halved grape tomatoes
  • ½ cup diced English cucumber
  • ¼ cup diced kalamata olives
  • 1 green onion thinly sliced
  • ½ cup feta cheese crumbled
  • thinly sliced fresh herbs such as mint basil, or parsley
  • black pepper

Instructions
 

Grill the pitas

  • Heat your grill or a grill pan on the stove top to medium high heat.
  • Mist or brush both sides of the pitas with a light coating of olive oil. Place them on the hot grill and cook until they soften have deep golden grill marks (2-4 minutes). Flip and toast on the other side the same way. Remove to a plate. If desired cover with a clean towel to keep warm a bit longer.

Make the pizzas

  • Top each pita with a generous scoop of hummus (2-3 tablespoons) spreading evenly across the surface - leave a finger width margin around the edges.
  • Top with a selection of diced vegetables then with feta (1-2 tablespoons),fresh herbs, and pepper to taste.
