Ham & cheese muffins with a pepper jack kick. An easy recipe to make ahead for weekday breakfasts. Also perfect for weekend brunch or give to a new mom who needs some easy comfort food.

Ingredients
  

  • 2 ¼ cup whole wheat pastry flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cup low fat buttermilk
  • 2 eggs lightly beaten
  • ¼ cup grapeseed oil
  • 2 tablespoon male syrup
  • 2 oz 1 cup shredded pepper jack cheese
  • 4 oz 1 cup diced deli ham
  • ¼ cup minced green onion approximately 2 stalks

Instructions
 

  • Heat the oven to 350F. Prepare your muffin pans by wiping 18 muffin cups lightly with oil.
  • Combine the dry ingredients in a large bowl.
  • Whisk together the buttermilk, eggs, oil, and syrup. Add the buttermilk mixture to the dry ingredients. Stir just enough to combine.
  • Rest the batter for 10 minutes. Then fold in the cheese, ham, and onions.
  • Divide batter evenly into 18 muffin cups. Bake 18-20 minutes until a toothpick inserted into the center of a muffin comes out clean.

Notes

Resting the batter gives the bran in the whole wheat flour time to hydrate. This results in a moister muffin.
To suit a milder taste preference: You may use cheddar cheese in place of the pepper jack. You may omit the onions.
