Off the shelf salad dressings - especially the low calorie variety - need extra ingredients to give them a long life and a consistent texture. They tend to have higher sugar and funky stabilizers and thickeners that you wouldn't use at home. When you make your own dressings you get to adjust the flavor to suit your taste preference and avoid all the extra stuff. Sure, homemade dressing won't last for 5 years in your refrigerator door (usually they last about 2 weeks) but do you really want to eat something that does??

All that aside, the main reason I like to make my own salad dressing is because I am busy. Yep there is so much going on in my world I make my own salad dressing. Sounds counter intuitive right? I don't ever have to remember to buy dressing because I always have something on hand I can turn into a healthy salad dressing. At minimum I splash a bit of balsamic vinegar over my vegetables and call it good. With 5 more minutes of effort I can shake up a jar of oil, vinegar, mustard, a drop of honey and some salt and pepper and be set for the next couple of weeks.
For this dressing you might need a full 10 minutes to pop the tops off the berries and give them a quick chop. It is a minor sacrifice to make when the result is this amazing. Don't just take my word for it, my kids are big fans of this creamy strawberry vinaigrette. I honestly didn't expect a salad dressing recipe to be such a hit with the kids. No surprise, they love the natural sweetness and have been asking for it at dinner time.
