I knew I wanted to work with Sabra Dipping Co. when I realized how much of their website was devoted to talking about how their products fit into a healthy active lifestyle. It has been so easy for me to share ways I use their yogurt dips, hummus, and salsas (psst! I spoon it on to eggs and salads) because they really do fit into our weight loss and healthy food diet. When they asked me to talk about their brand new Veggie Fusions I actually yelled, "yes!" while hitting the email reply button.
The defining feature of my busy family is we are constantly on the go. Our calendar fills faster than we can flip the pages. The Monday through Friday is a blur of work, school, chores, dinner, and bedtime all joined together by way too much time in the car. Typical weekends include attending birthday parties and family gatherings, spending time in church, and running errands.
We are happy social butterflies but when a Saturday comes along with no where to go it is it's very own kind of special day. After a slow syrup-covered breakfast, Mike and I put on our paint splattered jeans and old sneakers to become weekend warriors. Together we tackle projects all over our little homestead. Last year we replaced half our flooring, painted several rooms, then refinished and rehung our kitchen cabinets.
On these rare Saturdays at home, the last thing we want is to stop for a long lunch that takes time to prepare or requires a lot of clean-up. We want to pause for a moment to re-fuel, re-hydrate, then get back to feathering the nest.
When we raid the fridge for our quick Saturday lunches the first thing everyone (the kids included) reaches for is the Sabra. With a just a few scoops we add huge flavor to our grab-and-go food with no fuss and very easy clean up. The new Veggie Fusions are a mix of guacamole and vegetables so of course I was excited to try all the flavors. They are dip-able and spreadable just like guacamole and you can actually taste and see the vegetables. Adding vegetables to higher calorie ingredients, like avocado, is the best way to indulge in a bigger serving without multiplying the calories. I have used this technique myself on multiple occasions.
My one complaint (and it is a small one) is, unlike other Sabra products, Veggie Fusions do not have a lid. Presumably this is due to the need to enjoy fresh avocados quickly before they brown. This product will turn brown, as you would expect a cut avocado would, due to its natural ingredients. So, the solution I've found is to share with friends, with this tactic I've yet to have a container hang around long enough to need a lid.
A few weeks ago I put Veggie Fusions to the test. We were busy working on projects while the kids played with LEGO, then suddenly everyone was hungry. Fifteen minutes later we sat down to an exceptional lunch of avocado toast with smoked salmon. On a base of crisp English muffins I laid delicate slices of tomato, a scoop of Veggie Fusions Garden Vegetable and topped them with piles of flaky alder smoked salmon. Finished with a squeeze of lemon they looked like something you might order at an upscale seaside cafe. There were exclamations of happiness from each of us as we took our first bites.
My two year old has never liked avocado but he sat at the table dipping chip after chip into the remaining vegetable filled guacamole until he had to use a finger to get the last bits from the container. If that isn't a rave review I don't know what else to say. Except, this: if you are looking for more ways to fit healthy eating into your busy life Veggie Fusions are a great place to start!
Avocado Toast with Smoked Salmon
Ingredients
- 2 original English Muffins
- 4 thin ⅛ inch slices of tomato
- 4 tablespoon Veggie Fusions Garden Vegetable
- 2 oz hardwood smoked Sockeye salmon
- lemon for juice
Instructions
- Split the English muffins into four halves then toast to your desired level of crispness (medium is recommended).
- On each toasted half layer a slice of tomato, 1 tablespoon of Veggie Fusions, and ½ oz of flaked smoked salmon. Squeeze the juice of 1 slice of lemon over the salmon before serving.

Roxana I only recently started putting salsa on eggs and only the fresh kind. Look for Veggie Fusions in the produce section refrigerator case or the deli case near Sabra hummus. If you don't see them ask!
