There is no denying that there are some ingredients that just work well in light cooking. Egg whites may be one of the most versatile. Over the course of the past few weeks I have separated many many eggs for baking projects. Angel Food Cake is another recipe that requires egg whites. I read recipes that use anywhere from 12 to 18 egg whites whipped up and folded with sugar and a little flavoring. I considered the process involved in separating that many eggs and then I bought a mix.
The Betty Crocker Angel Food Cake Mix filled a loaf pan and made over 2 dozen cupcakes. Each serving came in under 50 calories. The fluffy and sweet little cakes were beautifully simple on their own. They also provided a fun starting place to whip up some fun desserts. To stream line the process even further pick up an already baked cake.
Even if this Valentines Day finds you too busy to start from scratch these beautiful Angel Food desserts are easy to whip up in a hurry.
Light and airy cupcakes taste like Spring with a layer of Yogurt Frosting. Flavor the frosting with citrus zest, Nutella, or a touch of your favorite flavor extract. Sweet and simple as they are you may be compelled to go crazy and have more than one! These would be a great to share with friends or co-workers.
Our Lady of Second Helpings Yogurt Cake Frosting
- ½ cup. of plain yogurt (regular or greek)
- ½ tsp. of vanilla extract
- 3 TB powdered sugar
- Additional Flavorings - ¼ tsp. additional flavor extract, ie. almond, ½ TB orange juice concentrate, 1 - 2 tsp. citrus zest, 1 TB Nutella (reduce sugar to 2 TB)
- Whisk together basic ingredients in a small bowl. Add any additional flavorings and stir to combine.
- Refrigerate for at least 1 hour up to overnight.
- Spread gently over cakes, cup cakes, or muffins.
Drizzle with Something Lovely:
A pure and simple approach to dressing up Angel Food Cake. Simply stir together a little vanilla yogurt (½ cup), lemon zest (1 tsp), and fruit preserves (1 TB). Let them sit in the fridge for a half hour or more and then spoon over your cake slices. To make it extra fancy dust with powdered sugar. Make these for a family dessert, a sweet way to end the day of love notes and chocolate kisses.
Who doesn't love a parfait! This idea leaves a lot of room for personalization. For the version pictured here, I tore up two cupcakes and layered them with yogurt and fresh raspberry syrup. If I was going to make this dessert again I would fold together sugar free pudding and reduced fat cool whip to make a mousse for the cream layer. Top with powdered sugar, chocolate shavings, or a few toasted nuts to create a really beautiful Valentines dessert. This dessert is perfect for that special someone you want to impress but you don't want to weight down with heavy, decadent food. You know so they have a little extra energy after dinner...
