When it comes to Fall foods the trick is to satisfy the primitive urge to fatten up for hibernation without actually fattening up. This simple Cabbage and Kielbasa recipe is one of my favorites. It completely indulges the desire to fill my belly with cozy food but I won't need to loosen my belt at the end of the meal.
A slow cooker is your best friend for this rustic one-pot meal. Toss everything in and flip it on early in the day then walk away and let it simmer until dinner time. After slogging through rainy traffic it is hard to beat walking into a house that smells like your house keeper has been cooking all day. A slow cooker meal means sitting down to a hearty dinner in a matter of minutes. Best of all you get to drive straight home after work, no precious time wasted navigating dark and soggy fast food parking lots.
To finish the meal quickly, serve cabbage and Kielbasa hot with an easy microwave "baked" potato (pierce with a fork then microwave on high for about 10 minutes until it is soft all the way through) or pile everything on a whole grain roll with a ton of mustard for the best ball park dog you ever made in 15 minutes!
Even though there are vegetables (and fruit) in this dish, I also like to serve my cabbage and Kielbasa with a salad. The crunch of fresh vegetables compliments the soft squish of the cooked cabbage. There should always be a variety of textures in your meal. Even if your flavors are out of this world, when everything is soft the food starts to feel blah. On the other hand, a plate of only crunchy-chewy and you will get frustrated with all the effort needed to finish a single bite.
This dish keeps extremely well as a leftover, it actually tastes better a day or two after you cook it. Pack up the remaining cabbage and kielbasa into individual containers and refrigerate. You can grab a box for a quick lunch-on-the-run and blissfully forgo fast food for the rest of the week.

Crock pot Cabbage and Kielbasa
Ingredients
- 1 lb green cabbage thinly sliced into ¼ inch strips
- 1 large ¾ lb red onion, thinly sliced into ¼ inch strips
- 2 medium green apples ⅔ lb, peel on, stem and seeds removed, thinly sliced
- 1 tablespoon caraway seeds
- ½ teaspoon cracked black pepper
- ¼ teaspoon Kosher salt
- ½ cup apple cider vinegar
- 2 14 oz Smoked Turkey Kielbasa Links, quartered
Instructions
- Layer the cabbage, onion, and apple in your crock then add the caraway, pepper, and salt, toss just a bit to combine. Pour over the vinegar and place the sausage quarters on top.
- Cover and cook on high for 4 hours. Hold warm after 4 hours if needed.
